WESTERN OMELET PIE 
3 tbsp. oil
1 c. onion chopped
3 1/2 c. frozen hash brown potatoes
1 1/2 tsp. salt
2 tbsp. butter
1 green pepper, chopped
2 tbsp. chopped parsley
1 1/4 c. milk
4 eggs, beaten
1 c. grated Swiss cheese

In skillet heat oil and add 1/4 cup onion, sauteing until soft. Add frozen hash browns and 1 teaspoon salt. Cook over medium heat until potatoes are soft. Pat into bottom and sides of 9-inch pie plate, forming crust. Bake 20 minutes.

In the same skillet, melt butter; add pepper, remaining onions, and parsley; saute. In medium bowl combine eggs, milk, and 1/2 teaspoon salt. Sprinkle crust with peppers, onions, and cheese. Pour in egg mixture and bake 30 minutes until set.
