CREAM OF BROCCOLI SOUP 
1 lg. onion, chopped
2 stalks celery, chopped
1 lg. bunch broccoli, chopped (6 c.)
4 c. water
2 tbsp. low sodium soy sauce
1 tsp. curry powder
1/2 tsp. garlic powder
Dash white pepper

In a medium size pan, saute the onions and celery in about 1/2 cup of water until soft, about 5 minutes. Add broccoli, the rest of the water and the seasonings. Cook over medium heat until the broccoli is tender, about 15-20 minutes.

Puree the soup in 2 batches in a blender. Place in a clean pan. Heat through. Serve hot. Garnish with some chopped parsley, chives or coriander if desired.
