CREAM OF BROCCOLI SOUP 
1 med. onion
2 c. chicken broth (stock)
3 c. chopped broccoli
Dash of curry powder
1 c. low fat milk
1 c. part skim ricotta

Saute onion in oil until golden, add chicken broth, broccoli and curry powder and simmer 10 to 15 minutes, remove from heat. In a blender, blend the milk and the ricotta and add to broccoli mixture, heat through. Return mixture to blender and blend until smooth, return to saucepan, heat and serve.
