BOLOGNA BURGER 
I had never heard of a bologna burger before moving to Virginia, but in certain areas it is a staple. Enjoy!

2 THICK slices bologna (1-inch ea. from the deli*)
4 slices of bread (your favorite)
1 small onion, sliced
2 tbsp. Heinz 57 sauce
2 tbsp. vegetable oil, divided

TOPPINGS:

1 large tomato, sliced
lettuce
2 slices American cheese
2 tbsp. mayonnaise

Have bologna sliced at least 1-inch thick at Deli counter.

In a hot skillet with 1 tablespoon of vegetable oil sauté sliced onions and add Heinz 57 sauce. Stir until onions are covered with sauce, set aside.

In a separate skillet add 1 tablespoon of oil and brown bologna slices on each side.

Prepare sandwich by adding remaining ingredients to slices of bread along with the bologna and onions.

Serves 2.

Variation: Instead of Deli bologna, use two slices each of "Super Thick Cut" bologna (such as Oscar Meyer).
