2 c. potatoes, in 1 inch cubes 1 c. carrots, in 1 inch cubes 1 c. eggplant, in 1 c. cubes 1 lg. onion, diced 1 c. sweet potatoes, in 1 inch cubes 2 c. cubed lamb or beef, browned with a little butter in sauce pan 1 tsp. each salt and pepper 1/2 tsp. cinnamon 1 can #2 tomatoes Put potatoes, carrots, eggplant, onion and sweet potatoes in casserole dish. Brown meat and add to vegetables. Add remaining ingredients, put cover on dish and cook in oven or microwave oven for 20 minutes. |
