TOMATO CHEESE CASSEROLE 
4 med. tomatoes
1 c. Cheddar cheese, grated
1/3 c. dried onion flakes
1/2 tsp. salt
1/8 tsp. pepper
1 c. potato chips, crushed

Preheat oven to 350 degrees. Slice tomatoes. Arrange half the tomatoes in bottom of 1 1/2 quart casserole. Put half the cheese and a sprinkle of onion in a layer over the tomatoes. Sprinkle with salt and pepper; repeat. Top with crushed potato chips. Bake 30 minutes, or until cheese is melted and bubbly. Serves 6.
