DEVILED EGG BASE | |
This base for deviled eggs works with almost any seasoning, but watch the salt content; taco seasoning likely has salt, but curry powder does not. Hot sauce may also be used, but adjust for texture as you are adding more liquid. 4 hard boiled eggs 2 tbsp. mayonnaise 2 tsp. Dijon mustard 1 tbsp. chopped fresh parsley 1 1/2 tsp. lemon juice pinch of cayenne pepper 1 tsp. seasoning your choice (curry powder, taco seasoning, Cajun seasoning, or other… watch the salt content) Bring water to a boil. Reduce heat and gently add cold eggs to boiling water. After 13 minutes, transfer the eggs from the boiling water to an ice water bath. Leave eggs covered in the ice water for 15 minutes. Peel the eggs and cut in half lengthwise. Separate the yolks from the whites. Cover the whites and place them in the refrigerator. To avoid lumps, push the yolks through a sieve and into a bowl. Add all of the other ingredients to the yolks and mash until smooth. Place this mixture in a baggie and refrigerate for at least an hour to allow all flavors to combine. Remove the whites and yolk mix from the refrigerator. Cut a corner off the baggie and pipe the mix into each egg white. Decorate with the seasoning you chose, and/or paprika, and/or chopped parsley or chives. Submitted by: DAL |
