POTATO CASSEROLE 
2 lb. bag of frozen chopped hashbrowns
1 can cream of chicken soup
1 tsp. salt
1/4 tsp. pepper
1/4 c. butter, melted
1/2 c. onion (optional)
1 pt. sour cream
2 c. shredded Cheddar cheese

Mix all ingredients and put into a 9 by 13 inch glass pan. Bake at 350 degrees for 45 minutes.
