BROCCOLI CHEESE CORNBREAD 
3 eggs, slightly beaten
10 oz. thawed chopped broccoli
12 oz. cottage cheese
2 (8 1/2 oz.) boxes Jiffy corn muffin mix
1 sm. onion, finely chopped
1 1/2 sticks butter

Place slightly beaten eggs in a large bowl. Add next 4 ingredients. Mix together and set aside.

Melt butter in a 9"x13" glass pan making sure sides of pan are well coated. Pour excess melted butter into mixture and mix well.

Pour mixture into pan and bake at 350 degrees for 25 minutes until golden. Cornbread will be moist in center. Do not let get too dry. Cool slightly. Cut into squares and serve.
