CRACKER PUDDING 
1 qt. milk
2 eggs, separated
2/3 c. sugar
2 c. broken saltines
1 c. grated coconut
1 tsp. vanilla

Heat milk. Beat egg yolks and sugar. Add to hot milk, stir in crackers and coconut. Cook until thick over medium heat. Remove from heat. Beat egg whites until stiff and fold vanilla in. Cool and serve. Serves 8-10.
