SCALLOPED FRENCH FRIED POTATOES 
1/2 c. butter
3/4 c. chopped green peppers
3/4 c. chopped celery
1/2 c. flour
1 1/2 tsp. salt
1/8 tsp. pepper
4 c. milk
1/3 c. chopped pimiento
3 pkgs. of 9 oz. frozen french fries (thawed out)
3/4 c. shredded carrots
3/4 lb. American cheese

Melt butter, add green pepper cook until tender. Add flour, salt and pepper. Gradually add milk, cook and stir until thick (20 to 25 minutes). Add pimiento, carrots, potatoes and half of the cheese and pour into shallow glass (3 quart size) or into 9 x 13. Bake 30 minutes, sprinkle with rest of cheese and bake until melted can be made the night before and kept in refrigerator. Serves 12.
