FRENCH FRIED POTATOES 
1 Idaho baking potato
2 tsp. vegetable oil
Paprika
Salt

Scrub potato, but do not peel. Cut in half lengthwise; cut each half into 8 lengthwise wedge-shaped strips. Soak in cold water 20 minutes. Spray a shallow nonstick baking pan with cooking spray for non-fat frying.

Blot potato strips dry; place in bowl; sprinkle with oil and paprika and stir well to coat evenly. Arrange strips in a single layer in pan. Bake at 475 degrees for 20 minutes, stirring frequently to brown evenly.

Blot well on paper towels; sprinkle with salt. Makes 2 servings at 112 calories each.
