FRENCH FRIED POTATOES 
Peel potatoes, cut into strips about 3/8" thick. Soak in cold water about 15 minutes. Drain. Dry thoroughly. In skillet, heat 1" oil to 375 degrees. Place just enough potato strips in skillet to cover bottom. Cook until lightly browned, 6 to 8 minutes. Drain on paper towels. Salt to taste.
