FRENCH FRIED POTATOES 
Prepare 1 1/2 pounds potatoes (about 4 medium) by washing, paring thinly and removing eyes. Cut potatoes into lengthwise strips, 1/4" wide. Fill deep fat fryer or deep saucepan 1/2 full with salad oil or shortening; heat to 375 degrees. Place potatoes in hot grease being very careful, fry 5 to 7 minutes or until potatoes are golden brown and float, remove with slotted spoon. Drain and salt to taste. 4 servings.
