QUICK YEAST ROLLS 
5 3/4 c. all purpose flour
2 pkgs. dry yeast
2 tbsp. sugar
1 tbsp. salt
1/4 c. soft butter
2 1/4 c. very hot tap water

1. Combine 2 3/4 cups of flour, dry yeast, sugar, soft butter, salt and hot tap water in large mixing bowl.

2. Mix all ingredients together on #5 (medium speed) for 2 1/2 minutes. Scrape sides and bottom of bowl.

3. Add 1 cup flour to mixture. Beat on #10 (high speed) for 1 minute.

4. Work in remaining flour with wooden spoon. Turn out onto floured board. Knead 5 to 10 minutes. Let rest 20 minutes.

5. Punch down dough. Shape into rolls. Brush top of rolls with melted butter. Cover with cloth. Refrigerate 2 to 24 hours.

6. Remove from refrigerator 10 minutes before baking. Bake at 400 degrees, hot oven, for 15 minutes or until done. Makes 3 dozen.
