RICOTTA PIE 
1 c. flour
1/2 c. butter
1 egg yolk
1/2 c. grated lemon rind
Add water as needed
1 1/2 lbs. Ricotta cheese
1/2 c. sugar
2 eggs, beaten
2 egg yolks
1/2 c. sugar
1 tbsp. lemon peel
1 tbsp. orange peel
2 tbsp. golden raisins

For pastry, mix flour, butter, 1 egg yolk, 1/2 cup lemon rind and water as needed. Roll out pie crust for a 9 inch pan.

Mix together Ricotta cheese, sugar and 2 eggs. Mix until smooth then add 2 egg yolks. Add sugar, lemon peel, orange peel and raisins. Fill crust and bake at 350 degrees for 50 to 60 minutes.
