RICOTTA PIE 
1 c. flour
1/4 c. sugar
1 tsp. baking powder
1/2 tsp. salt
6 tbsp. butter
1 egg
1 (8 oz.) pkg. cream cheese
1/3 c. sugar
1 lb. ricotta
2 eggs, separated
3 tbsp. flour
1/2 tsp. lemon rind
1/2 tsp. vanilla
3/4 c. milk or half & half
1/2 c. sweet chocolate, cut in sm. pieces
1/2 c. citron, grated

In a mixing bowl, thoroughly stir together first 6 ingredients to form a well- mixed dough. Press dough over bottom and sides of a deep dish 9-inch pan, fluting edge.

In a large bowl, beat cream cheese with 1/3 cup sugar until smooth. Blend in ricotta cheese, 2 egg yolks, 3 tablespoons flour, lemon rind, vanilla, citron, and chocolate. Stir in milk. Beat 2 egg whites until dry and fold into cheese mixture. Put in pie shell. Bake at 325 degrees for approximately 1 hour or until knife inserted comes out clean. Refrigerate.
