GREAT OLD FASHIONED CHICKEN AND
DUMPLINGS
 
This was taught to me by my now deceased Mother-in-law who was an excellent cook.

1 whole chicken, cut up
salt
black pepper
butter
all-purpose flour
ice water

Note: You will need a rolling pin and a floured surface.

Broth:

Wash and place the cut up chicken in Dutch Oven with plenty of water to boil. Add salt to boiling chicken (to taste), black pepper and a stick of butter. Make sure there is enough water in pot to create ample broth for dumplings.

When chicken is tender and well done, remove from bone. Remove bones from broth leaving chicken meat in broth; turn onto simmer while you prepare dumplings.

Dumplings:

2 1/2 cups all-purpose flour
1 teaspoon salt mixed into flour
Ice water (stir enough into flour mixture to make a stiff dough)

Place on the floured surface and knead, making sure the dough is stiff. Roll out with floured rolling pin until very thin, about 1/8-inch. It make take some elbow grease, but the results are well worth it!

Cut into 1-inch strips and let it dry for a few minutes. It should be partially covered with flour.

Meanwhile, turn up the chicken and broth; slowly drop the long dumplings into the boiling broth. As they cook they will become somewhat stiff; that's what you want.

When enough dumplings have been added to broth, (you may not need them all) and don't add too many because they have to boil and cook.

It's OK if some flour drops into pot with dumplings. The temperature should not be any higher than medium and as dumplings cook it will need to be turned down more. Place lid on pot and cook until dumplings begin to float and become somewhat translucent. You will know when they are done because they will thicken.

Stir and enjoy... Practice and you will be in great demand at get-togethers. Enjoy!

I have been making these for years! My sister taught me. She always added chicken bouillon, black pepper and parsley flakes to the water for the dumplings. Way good! You would of course have to cool the water first. it really gives the dumplings the best flavor!

I have been looking for this recipe for YEARS! My beloved Mom passed away & I never learned to make her dumplings. :0( The closest I can come to them is Cracker Barrel, so I am OVER THE TOP excited to try these. My darling daughter remember's "Nanny's dumplings", so it will be a wonderful blessing for the 2 of us to make these together, in honor of the world's greatest MOM! THANK YOU SO MUCH JEWEL!

So to put the "man twist" on it. I didn't want to bother with bone in chicken; as comfort food it should be simple right?

I made the broth with 3 chicken boullion cubes and added cubed boneless skinless chicken breasts. Everything else about the recipe was unchanged. This came out just about as perfect as could have wished for, and my kids ate it happily (which is a real accomplishment since it isn't round and covered in tomato sauce and cheese).

As many have already said, I found this while looking for a chicken and dumplings recipe that would help me find my deceased mother's miracle food. This is the closest I have ever found. It is incredible that I both drooled and cried when I smelled the chicken cooking with the dumplings. I know the only thing that is missing is the love she used to prepare this dish. She taught it to me, or at least tried to by having me watch and help when I was a kid. It is only recently that I've been able to reconstruct some of these memories with the help of recipes likes this, and why they are so important to me now more than ever. Thank you Jewel. Love the simple recipe of chicken 'n dumplings like the old days of grannys cooking, I too add cooled chicken broth to the flour for more flavor, they turn out great, I do need to know though do you cook dumplings with the lid on or off? Thanks for posting all time farmer grannys wonderful food that came from her hands that she wiped on her long full apron, those were the good 'ol days.

Finally! The southern way to do chicken and dumplings. This is what I grew up on. None of that celery, cream of chicken soup..bleh! My granny (who is 95) has been making this her whole life. I think her dumpling recipe is different though. My mom, aunt, and I do the modern thing. We just drop in biscuit dough from a can. :) This is the way to do chicken and dumplings.

Absolutely delicious.I didn't add enough liquid, which I rectified easily by adding a can of chicken broth. Even my picky 9-yr. old son loooved it. Everyone had seconds and wanted thirds! I agree with everyone, I have been trying to find this dumpling recipe for years! All the dumplings I have ever made seem to disintegrate in the hot liquid. These are dense, like a noodle, and so very easy to roll! Thanks so much for sharing! :)
