BONELESS CHICKEN WITH ITALIAN
BREAD CRUMBS
 
Boneless, skinless chicken breasts, 5 oz. each
Mayonnaise (Hellmann's cholesterol free is a good choice)
Italian bread crumbs

Cover chicken breasts with a thin layer of mayonnaise. Roll chicken in Italian bread crumbs until evenly coated. Bake in a preheated 350 degree oven for 45 minutes. (Be careful not to over cook.)

This is a very simple and tasty way to prepare low fat, low cholesterol chicken. Serve it with rice pilaf, green beans and glazed baby carrots for an elegant meal.

I wasn't sure if I would like this when I read the recipe because I hadn't heard of using mayo before but decided it was only one meal if I didn't like it so why not? This is fantastic! I made this with one chicken breast and cooked it for 30 minutes, took it out and placed a slice of mozzarella cheee on top, and put it back in for another 10 minutes. Really easy and very delicious.
