CHEDDAR CHEESE LOAF 
1 1/2 c. packed grated Cheddar cheese (old)
1/3 c. melted butter
1 med. onion, minced
3 eggs
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 tbsp. chopped fresh herbs

Generously grease 8 x 4 inch loaf pan. Heat butter; cook onions to soften, do not brown. Remove from heat. In large bowl, beat eggs. Add butter and onion. In separate bowl, sift flour, baking powder, and salt. Quickly blend into egg mixture along with grated cheese and herbs (choose fresh dill, parsley, and chives). Also add chopped crisp bacon and red and green peppers. Bake in preheated 375 degree oven 45 minutes or until toothpick comes out clean. Chill and slice thin. Good hot or cold.
