WALNUT CHEDDAR LOAF 
1/2 c. raw brown rice, cooked (about 1 1/4 cup)
1 c. walnuts, chopped
1 c. grated cheese
2 tbsp. lemon juice
2 c. chopped onion, sauteed
2 eggs, beaten
1/4 tsp. salt
2 tbsp. nutritional yeast, optional

Mix well. Place in oiled casserole. Bake at 350 degrees for 30 minutes. We double or triple this recipe, but the cooking time also doubles.

Serve with cheese sauce. Melt and stir together in saucepan:

3 tbsp. butter
3 tbsp. flour

Stir in slowly, 1 1/2 cup milk. When sauce is smooth and hot stir in 1 cup shredded cheddar and 1/2 teaspoon dry mustard.

This is a Diet For A Small Planet Recipe -- except that the caraway seeds are omitted here. The original recipe gets 5 stars; this version, maybe a 3. If you want it to taste fabulous, please use the nutritional / Brewer's Yeast and add the Caraway Seeds! You can tweak amounts, but without the Nutritional (or Brewer's for a stronger taste) Yeast and Caraway Seeds, it is just ho-hum.
