WALNUT LOAF BREAD 
3/4 c. sugar
2 eggs
2/3 c. raisins
2 c. flour
1 tsp. salt
2/3 c. oil
1 1/3 c. finely grated carrots
2 tsp. lemon peel
3 tsp. baking powder
1 c. chopped walnuts

Mix sugar, oil and eggs together well. Add carrots, lemon peel and flour, mixed with baking powder and salt. Add raisins and walnuts, reserving 2 tablespoons of walnuts for top. Pour into greased and floured loaf pan. Bake at 350 degrees for 1 hour. Let stand 10 minutes before removing from pan.
