PORTER'S BANANA NUT BREAD 
Had many repeat customers. I made and sold these loafs at my Produce stand. This is a modified version of a different recipe.

2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/4 cups sugar
1/2 cup (1 stick) butter
2 eggs
1 1/2 cups bananas, mashed (4 regular size)
1/2 cup lactose free milk (My favorite is sweet almond milk)
1 tsp. vanilla (or any other type of flavoring)
chopped nuts (of your choice)

Note: If you use sweet almond milk omit adding vanilla. If you use chocolate chips lower the baking temperature to 325°F and add 15 minutes baking time.

Preheat oven to 350°F. Grease bottom only of two (8x4-inch) pans or 1 larger loaf pan.

Sift flour, baking soda and salt twice! In large bowl mix sugar and butter until smooth. Continue mixing while adding eggs, bananas, milk and flavoring until mixed well. Stir in dry ingredients until mixed (don't over-stir).

Add nuts or wait until batter is added to pans so you may divide nuts between pans (pecans in one, walnuts in the other).

Pour into greased pans and bake at 350°F for 1 hour 15 minutes.

Note: I do not like using metal loaf pans. I use the aluminum pans. The cooking time is different with the metal loaf pans.
