SWEET CUCUMBER PICKLES | |
8 qt. (2 inch) cucumbers 1/2 c. pickling salt 4 c. vinegar 8 c. sugar 1 tsp. turmeric 1 tbsp. celery seed 1 tbsp. mixed pickling spice Wash pickles and place in crock. Pour boiling water over them, and let stand overnight. Drain and repeat for 6 days. On the 7th day, drain and add salt. Cover with boiling water. Let stand overnight; drain. Prick cucumbers. Combine vinegar, 4 cups sugar, turmeric, celery seed, and pickling spice. Heat and pour over cucumbers each morning for 2 or more mornings. Pack in hot sterilized jars. Add remaining sugar to vinegar, mix, heat to boiling and pour over the pickles in the jars. Makes 8 pints. Process 10 minutes in boiling water bath. |
