PRESERVING CUCUMBERS FOR MAKING
SWEET PICKLES LATER
 
Wash small cucumbers and pack in fruit jars. Make brine of 4 cups water, 1/2 cup salt, 1/2 cup apple cider vinegar. Bring to boil; pour over cucumbers in jars. Seal and store.

To make sweet pickles, drain off salt solution. Cut each pickle in half lengthwise. Put in open bowl and pour boiling water over pickles to freshen. Let stand until water has cooled. drain off.

Boil: 2 cups sugar, 2 cups apple cider vinegar, 1 cup water and mixed pickle spices. Pour this boiling hot over cut pickles. Let stand open for day or so until they obtain a dark green color. Eat and enjoy.

Saved pickles from last summer and just finished a batch. They are excellent. Handy for when you only have a few cukes at a time come off the vines.
