Peel and slice egg plant (1/2 inch) dip in egg white, then cracker crumbs. Place on cookie sheet sprayed with Pam. Place in oven and brown on both sides. Place in baking dish with salt, pepper and onion powder Cover with tomato sauce and Parmesan cheese and mushrooms. Bake until tender.
