BAKED STUFFED EGG PLANT 
1 lb. ground beef
1/4 c. chopped onion
1 med. clove garlic, minced
2 med. eggplant
1 sm. can tomato sauce
1 (6 oz.) pkg. Stove Top stuffing (beef flavor)
1 3/4 c. water
1/4 c. butter
1 sm. can sliced mushrooms
1/2 c. grated Parmesan cheese

In Dutch oven brown beef, onion and garlic. Meanwhile, cut eggplant in half lengthwise. Scrape out meat leaving 1/4 inch in around shell. Chop eggplant and add to meat. Stir in contents of seasoning packet, water and butter; bring to boil. Reduce heat; cover and simmer 8 minutes.

Stir in stuffing crumbs, mushrooms, 1/4 cup cheese. Cover; remove from heat. Let stand 5 minutes. Place eggplant shells into a greased shallow pan. Fill with meat. Pour on sauce; sprinkle with rest of cheese. Bake at 350 degrees for 30 minutes.
