STUFFED EGG PLANT | |
Cut the egg plant into 2 halves - lengthwise. Place a small amount of butter into a pan and saute as many onions as you wish. As the onions are browning, scoop out the pulp of the egg plant. Cut the pulp up into small pieces. Put the brown pulp into the onions and fry until brown. Mixture will be very mushy looking. (You will need to add a little more butter to your pan as egg plant soaks up the butter.) As egg plant is cooking in the pan, take about 4 slices of white bread and dice into, enough for at least 1 1/2 cups. (More if you like.) Place the cut up bread into a bowl and mix well with 1 egg. Next, when the egg plant is brown and done, take the mixture and blend with the egg and the bread. Take the mixture and put back into the shells. Now cut up about 1 more cup of bread. Sprinkle the bread after cut up with melted butter. Enough to brown the bread as it bakes. Sprinkle 2 tablespoons of Parmesan cheese on the top of the egg plant. Now place the bread with butter and cheese on top of the egg plant. Place in shallow pan and add a few tablespoons of cold water to the bottom of the pan to prevent burning and bake at 350 degrees for about 1/2 hour or until golden brown. |
