POTATO & CABBAGE SOUP 
4 lg. or 5 med. potatoes, peeled & sliced
1 sm. head cabbage, shredded
1 med. onion, chopped
1 oz. butter
1 pt. water
1 tsp. salt
1/2 tsp. black pepper
8 oz. (1 c.) cream

Put butter into a large pot, then add onions and slowly cook them until slightly golden brown. Next, add water, potatoes, cabbage, salt and pepper. Cook until tender, then add cream and reheat while stirring.

After cooking, I ran the cabbage and potatoes through my blender, until just a little lumpy. Then I used non-fat milk and plain yogurt in place of the cream. It was like potato soup with a kick. Delicious and healthy. Even my picky eater husband loved this soup.

I love this soup! I thoguht it was too thick so I added a cup of chicken broth before I added the cream. Also, I used a potato masher and made it a bit less chuncky. My son said it was perfect!
