CHICKEN AND BROCCOLI CASSEROLE 
1 small pkg. frozen broccoli
4 small chicken breasts (skinless and boneless)
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 pkg. shredded cheese
1 small onion, chopped
1/2 small carton sour cream
3 heaping tbsp. mayonnaise
1 c. rice
6 pieces bread, cubed

Boil chicken until done. Mix uncooked broccoli, mayonnaise, sour cream, onion, broccoli, soups and cheese until all ingredients are thoroughly coated and wet.

Cut up cooked chicken into small pieces. Mix into vegetable mixture. Cook rice until done. Add to mixture and mix well. Place in casserole dish.

Bake for 30 minutes or until broccoli is done at 375°F. Mixture should be thick.

Can freeze leftovers into smaller servings.
