NELLE'S CHICKEN-BROCCOLI
CASSEROLE
 
1 -10 oz. pkg. frozen broccoli
3 tbsp. chopped onion
4-5 cooked boneless chicken breasts
1 1/2 c. mayonnaise
1 can cream of chicken soup
1 can mushroom soup
3 eggs, beaten
1 tbsp. lemon juice
1 tbsp. melted butter
1/2 c. grated cheese
croutons
potato sticks
salt and pepper

Steam broccoli till tender; drain. Add lightly beaten eggs, mayonnaise, lemon juice, onion, salt and pepper, soups, and 1 cup of cheese; mix well. Cut chicken into bite size pieces; put into a casserole dish; then broccoli. Spread soup mixture over broccoli and chicken. Put 1/2 cup of cheese on top. Top with croutons and potato sticks.

Cook at 340°F for 45 minutes.

Serves 8-12.
