CHICKEN BROCCOLI CASSEROLE | |
1 (8 oz.) pkg. stuffing mix (chicken) 1 (16 oz.) package of frozen broccoli 4 lg. chicken breasts, cooked & boned 3/4 - 1 c. chicken broth (left from cooked chicken, seasoned with garlic, onion, oregano, etc.) 2 cans cream of chicken soup 1/2 c. mayonnaise 1 tbsp. lemon juice 8 oz. Mozzarella cheese, grated 1 1/2 c. fine bread crumbs 3 tbsp. butter Parmesan cheese (opt.) Prepare stuffing mix according to package. Place in a greased baking dish, 10"x13"x2". Cook broccoli for a few minutes. Arrange over stuffing. Put half of cheese over that. Then cut cooked chicken into pieces and place over top. Blend chicken broth and 1/2 cup of mayonnaise and lemon juice and cream of chicken soup over the chicken. Put the rest of the cheese over that. Mix bread crumbs, 2 to 3 tablespoons butter and Parmesan cheese and sprinkle over top the casserole with it. Bake at 350 degrees for 40 minutes or until golden brown. |
