POTATO LATKES (PANCAKES) 
2 1/2 lbs. Idaho potatoes, grated
1 lg. onion, grated
1/4 c. matzo meal or flour
2 eggs
Salt and pepper
Oil to fry

TO SERVE TOP WITH:

Sour cream
Applesauce
Cinnamon and sugar

Mix all ingredients. Heat oil in frying pan (1/4 inch deep). Use large spoon to transfer some potato mixture to the oil, then flatten the mixture slightly with back of spoon. Continue making latkes until skillet or pan is full, leaving little room between each one. Fry until well browned on both sides and crisp around edges. Drain on paper towels. Repeat until all are fried. Serve latkes as soon as possible. Top latkes with sour cream and applesauce or cinnamon and sugar.
