FRENCH COCONUT PIE 
3 eggs
1 1/2 c. sugar
1/2 c. soft butter
1 tbsp. lemon juice
1 tsp. vanilla extract
1 (3.5 oz.) can coconut
1 unbaked 9 inch pie shell

Beat eggs in bowl with fork; stir in sugar, butter, lemon juice, vanilla and coconut. Pour into pie shell. Bake in preheated oven at 350 degrees for 45 minutes or until knife inserted halfway between center and edge comes out clean, cool.
