EASY FRENCH COCONUT PIE 
Basic one crust pastry recipe
1 stick butter, melted
1 1/2 c. sugar
3 eggs, beaten
1 tbsp. vinegar
1 tsp. vanilla
1 c. flaked coconut

Preheat oven to 350 degrees. Line pie plate with pastry. Combine all other ingredients and pour into the pie shell. Bake for about 1 hour. Cool at least 10 minutes. May be doubled.
