FRESH APPLE COFFEE CAKE 
1 c. oil
2 tsp. vanilla
2 c. sugar
2 eggs, beaten
3 c. diced, peeled apples
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. chopped walnuts

Mix oil, vanilla, sugar, eggs and apples together. Add flour, soda and cinnamon. Stir until thoroughly mixed. Stir in greased 9 x 13 inch pan.

TOPPING:

1/2 c. sugar
1/2 c. flour
1 tsp. cinnamon
4 tbsp. butter, melted

Mix topping ingredients together and spread on cake batter (I also put 1/2 cup chopped nuts on top of topping). Bake at 350 degrees until cake is done, about 40 minutes. Delicious!
