FRESH APPLE POUND CAKE 
1 1/4 c. Wesson oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 med. apples, peeled and chopped
3 c. self-rising flour
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1 c. chopped walnuts or pecans

Combine oil, sugar and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients (flour, soda, salt); add to above mixture. Fold in apples and nuts.

Bake in a tube pan at 325°F for 1 hour 20 minutes. Makes an excellent Christmas cake served with vanilla ice cream.
