FRESH APPLE SHEET CAKE 
2 to 3 lg. Granny Smith apples (peeled and sliced)
1 1/2 c. self rising flour
1/2 c. Crisco oil
2 eggs
2 tbsp. lemon juice
1 c. sugar
1 tsp. vanilla
1/4 c. seedless raisins, optional

TOPPINGS:

1 tsp. cinnamon
1/4 c. sugar
1/4 stick butter

Mix sugar and flour. Add eggs and oil. Mix well. Add lemon juice, vanilla and mix. Add raisins, if desired. Pour into greased and floured 9 x 9 x 1 3/4 inch baking pan. Place sliced apples, slightly overlapping, in rows to cover batter. Sprinkle evenly with sugar and cinnamon topping.

Bake at 350 degrees for 25 to 30 minutes or until tests done. Batter will partially cover apples - a moist cake. Remove from oven and drizzle melted butter over cake. Cool in pan. Serves 9 large servings.

Top with whipped cream or topping if desired. Freezes well. May be reheated - oven or microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
