FRESH APPLE BUNDT CAKE 
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. vegetable oil
2 c. granulated sugar
3 eggs
3 c. diced raw cooking apples
1 tsp. vanilla
1 c. chopped nuts (I add extra)

TOPPING:

1/2 c. melted butter
1/4 c. granulated sugar
1 tbsp. light corn syrup
1 tsp. vanilla

Sift together flour, salt and soda. Add oil, sugar, eggs, apples, vanilla and nuts. Mix together until well blended. Spread into greased and floured tube pan. Bake for 1 1/4 hour at 350 degrees.

Topping: Mix topping ingredients until blended and then pour over hot cake in pan, letting it drizzle down sides. Let cake cool about 1/2 hour before turning out of pan. Dust with powdered sugar if desired.

excellent with or without nuts. I suggest chopping the apples up very small (I used my food processor). It only took this recipe a little less than an hour at 350°F in my oven.
