FRESH APPLE COFFEE CAKE 
1 c. sugar
1/2 c. shortening
1 egg
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 c. peeled, chopped apples
2 tbsp. all-purpose flour
1/3 c. firmly packed brown sugar
1 tsp. ground cinnamon
1/2 c. chopped pecans

Cream sugar and shortening until light and fluffy; add egg, and beat well. Combine 1 1/2 cups flour, soda, and salt; add to creamed mixture, mixing well.

Combine apples with 2 tablespoons flour, stir into batter. Pour batter into a greased 10x6x2 inch baking dish.

Combine brown sugar, cinnamon, and pecans; sprinkle over batter. Bake at 350 degrees for 40 minutes. Yield: 8 servings.
