PORK CHOPS NEAPOLITAN STYLE | |
6 loin pork chops, 1/2 inch thick 1/2 c. salad oil 1 qt. button mushrooms 1 sweet green pepper, cut in lengths 1 lg. onion, sliced Salt to taste Pepper to taste 1 (No. 2) can tomatoes Brown chops in oil, fry for 15 minutes. Remove from pan and transfer to large saucepan. Saute mushrooms and peppers in same oil as chops, over medium flame until soft. Fry onion in same oil until soft, add tomatoes, simmer 5 minutes. Pour this sauce over chops, cover pan and cook slowly over low flame until chops and vegetables are tender, about 30 minutes. |
