CRUNCHY OVEN-BAKED CHICKEN 
2 c. Ritz cracker crumbs
3/4 c. grated Parmesan cheese
1/4 c. chopped parsley
1 clove garlic, minced
2 tsp. salt
1/8 tsp. pepper
1 chicken, cut up or 8 boned chicken breast halves
1 c. butter, melted

Combine cracker crumbs, cheese, parsley, garlic, salt and pepper. Dip chicken pieces in butter and roll in cracker crumb mixture. Arrange chicken in a shallow roasting pan, skin side up. Pour remaining butter over chicken and bake uncovered at 350 degrees for 1 hour. Do not turn chicken. Makes 4 main dish servings.
