FRIED ZUCCHINI 
1 1/2 lbs. sm. zucchini
1/4 c. butter
1 clove garlic

Scrub zucchini and cut in thin slices. Melt butter in skillet. Add garlic and zucchini and cook over medium low heat, stirring occasionally, about 10 minutes. Cover tightly. Lower heat very low and simmer 5 minutes, stirring until zucchini is tender. Makes 4 to 6 servings.
