LINDA'S BLACK BEAN SOUP 
2 c. black beans
1 lg. onion, diced
2 tsp. cumin
1/4 tsp. red chili powder
1/2 tsp. black pepper
2 (3 oz.) salt pork, fried, save drippings
1 tsp. garlic
2 c. water

Boil black beans in 1 quart water for 2 minutes. Let set 1 hour. Drain beans, add all ingredients except salt pork and cook for 1 1/2 hours. Fry salt pork in small skillet until brown, about 1/2 hour. Add to beans and cook for another 1 1/2 hours or until beans are tender. Serves 4.
