ZUCCHINI AND TOMATOES 
2 tbsp. butter
1 c. corn (frozen or canned)
1 to 2 med. zucchini, sliced 1/4 rings
1 c. tomato, chopped
2 tbsp. chopped onion

Saute onion in butter. Add corn, cook 2-3 minutes. Add zucchini, saute 2-3 minutes. Stir. Cover to create steam or add 2 tablespoons water. Add tomatoes. Cook until squash is tender.
