POM SURPRISES 
1 c. butter
1/2 c. sugar
2 tsp. vanilla
1/4 tsp. salt
2 c. flour
Coconut
Filling: nuts, dates, candied cherries, chocolate chips, etc

Cream butter with the sugar and vanilla until fluffy. Sift flour with salt and blend well with creamed mixture. Shape dough a round a nut, piece of date, or candied cherry or a few chocolate chips, to form a 1 inch ball. Roll in coconut. Bake on ungreased cookie sheet at 325 degrees for 18 to 20 minutes.
