PARSNIP PATTIES 
4 c. thinly sliced, pared, cored parsnips
1/3 c. sliced onions
1 3/4 tsp. salt
1 1/4 c. boiling water
1/4 c. snipped parsley
1 egg, beaten
1/2 c. coarse fresh bread crumbs
Speck pepper
Packaged dried bread crumbs
2 tbsp. fat

Cook parsnips with onions and salt in boiling water, covered, 15 minutes or until tender. Drain; mash. Add parsley, egg, fresh bread crumbs and pepper. Chill well. Form into 8 patties. Roll in packaged crumbs. In hot fat in skillet, saute patties on both sides until brown. Makes 8 servings.
