PARSNIP PUFF | |
6 med. parsnips, peeled 3 lg. potatoes, peeled 1/2 tsp. baking powder 1/4 c. cream 1/2 tsp. salt 1/4 tsp. BLAIR black pepper 1 tbsp. butter 1 tsp. BLAIR butter flavoring 1/2 c. grated cheese 1/2 tsp. BLAIR paprika for garnish Slice parsnips and potatoes crosswise in rounds 1/2 inch thick. Cook parsnips in boiling salted water for 10 minutes, add potatoes and continue cooking until both are tender. Drain well, mash. Dissolve baking powder in cream and add to mixture, then add salt, pepper, butter and flavoring. Pile lightly into a well greased casserole, sprinkle with cheese and paprika. Bake in a 350 degree oven for 1/2 hour until cheese is melted. Yields: 6 servings. |
