“LITE CHICKEN CAESAR SALAD” IS IN:

LITE CHICKEN CAESAR SALAD 
1/4 cup soy Parmesan cheese, grated
1/4 cup fat-free mayo
1/4 cup water
2 tbsp. lemon juice
1/2 tsp. anchovy paste
1/2 tsp. Worcestershire sauce
1/4 tsp. pepper
1/8 tsp. dried mustard
2 tsp. minced garlic
4 slices French bread, cut into cubes
8 cups torn Romaine lettuce
4 boneless, skinless chicken breast, cooked, cut into cubes

Preheat oven to 350°F. Spray a baking sheet with cooking spray. Place bread cubes on cooking sheet.

Bake for 15 minutes or until toasted. Remove from oven. In bowl, whisk together Parmesan cheese, mayonnaise, water, lemon juice, anchovy paste, Worcestershire sauce, pepper, mustard, and garlic, whisk well.

In a large bowl, add croutons, lettuce and chicken. Add dressing. Toss well.
