APPLESAUCE RAISIN CAKE 
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 c. butter
1 beaten eggs
1 c. molasses
1 (8 1/2 oz.) can applesauce (1 c.)
1/2 c. raisins
3/4 c. sifted powdered sugar
4 tsp. lemon juice

In a medium bowl, combine flour, soda, cinnamon and only 1/2 teaspoon salt. Cut in butter to resemble coarse crumbs. In another small bowl, stir together egg, molasses and applesauce; blend into flour mixture just until moistened. Stir in raisins. Turn into a greased and floured 9 x 9 x 2 inch baking pan. Bake at 350 degrees for 40 to 45 minutes or until cake tests done. Cool in pan 15 minutes. Combine powdered sugar and lemon juice; spread over warm cake. Serve warm or cool.
